Brendan's favorite apple, fermented with sake yeast. '23 harvest, early '24 bottling, aged en tirage up until right now. Expect gorgeous silky bubbles like a vintage champagne, with clean crisp apple acidity, touches of white pepper, and golden melon.
Deep purple skinned, naturally waxy, deliciously crisp, dense yellow flesh. Each year, we collect as many Arkansas Black apples as we can and celebrate this late season apple in its own single varietal. While this is an unusual apple we're lucky enough to find it at several local orchards in Calaveras and Tuolumne Counties.
Drinking Instructions: Store upright and chill for 3 hours before drinking. Bottle contains natural sediment at the bottom.
